Aged Cheeses

Aged Cheeses  form a hard and well defined rind over time that protects the interior of the cheese. The aging process determines the taste of aged cheeses such as provolone and, depending on the length of the aging process; they acquire a slightly piquant flavor and a mildly accentuated aroma. These cheeses melt beautifully, with a molten consistency that spreads slowly and stretches into tantalizing strands as it cools. It can be fried to attain a golden crisp crust encasing the melted interior. Del Vecchio aged cheeses make excellent appetizers and desserts and are particularly tasty with crackers, scrumptious artisan breads, fruits, and vegetables.

Aged Pear Cheese

This cheese is aged to perfection with just the right piquant, bitey flavor that distinguishes this hand formed, limited production provolone from others not made with the level of cheese making attention of Del Vecchio cheeses. 

  • Provoloncino – this presentation is a smaller version of the provolone cylinders described above.
  • Provolone slices with olive oil and spices – slices can be seasoned with oregano or other spices as desired and drizzled with extra virgin olive oil.
